Green Pozole

 

Ingredients:

4 to 5 cloves of garlic minced

One white onion diced

Olive Oil

4 to 6 tomatillos

1 to 3 jalapenos

2 Cartons of chicken stock

1 Whole Rotisserie Chicken shredded

2 Cans of White Hominy, drained of liquid

1 teaspoon ground cumin

1 bay leaf

½ bunch of cilantro roughly chopped

 

Directions:

Remove the skins from the tomatillos and the stems from the jalapenos and place in a pot of boiling salted water and boil them until they become soft.  Remove from the pot and place tomatillos and one jalapeno in a blender or a food processor and blend until smooth.  Carefully taste the mixture to adjust for heat.  If you would like it spicier then add another jalapeno.  Take a large soup pot or stock pot and put it on the stove on Medium High and pour in enough olive oil to just coat the bottom of the pan, be careful not to pour too much in!  When the oil is up to heat put in the diced onions and cook them until they begin to soften then add the garlic and sauté this mixture for about one more minute.  Next, add the tomatillo jalapeno mixture and turn the heat to high.  Cook this mixture for 2 to 3 minutes just to thicken it up a bit, stir well while it is cooking.  Next add your stock, chicken and hominy and bring to a gentle boil.  When the Pozole reaches a boil reduce the heat to a simmer and add the cumin, the bay leaf and the cilantro.  Stir and taste to see if the soup needs more cumin, or even salt.  Usually the soup will be salty enough from the stock, but you can add more if you would like.  Gently simmer the Pozole for at least an hour, but you can let it simmer for several if you want, just put the lid on loosely if you are going to simmer for several hours.  Give it a stir every once in a while to check its progress.  When ready, serve in bowls with the following possible additions:

 

Extras That Make it Tastier!

One of the great things about Pozole is adding other things to it.  On its own it is a delicious soup, but you can have little bowls of the following available for people to put in their Pozole to make it even more delicious:

-          Half a head of cabbage shredded

-          Queso Fresco

-          2 to 3 Avocadoes diced

-          1 bunch of Cilantro chopped

-          3 to 4 radishes sliced
