Pork Spareribs in Sauerkraut

Ingredients:

3 to 4 Pork Spare Ribs (preferably boneless, but bone-in is fine)

Olive or vegetable oil

1 jar of Sauerkraut drained

1 white onion chopped

3 cloves of garlic minced

1 ½ to 2 cups of dry white wine or chicken stock

Salt and Pepper

Directions:

Put enough oil in a frying pan to just coat the bottom of the pan.  Turn the heat on under the pan to medium high.  While you are waiting for the pan to heat up sprinkle salt and pepper lightly on every side of the ribs.  Sear each side of the ribs in the oil and place into a slow cooker/crockpot.  Turn the heat down to medium and sauté the onions and garlic in the pan until they are just soft, which should only take a few minutes.  Deglaze the pan with one cup of the wine or stock and turn the heat to low.  Next, pour the drained sauerkraut into the slow cooker on top of the ribs.  Pour the mixture in the frying pan into the slow cooker and then top off with the remaining wine or stock.  Cook this on low for about 4 hours or until the ribs are falling apart tender.  Serve or keep on low until ready to serve.
