Antipasta Salad

Ingredients:

1 large package of mixed greens thoroughly washed

1 package of sliced provolone cheese cut into thin strips

1 package of sliced Genoa salami cut into thin strips

1 package of cherry tomatoes washed and sliced in half

10 green olives roughly chopped

10 black olives roughly chopped

1 jar marinated quartered artichoke hearts

½ cup fresh grated parmesan cheese

 

Directions:

1.       In a large bowl put the first 6 ingredients. 

2.       Remove the artichokes from the jar, reserving the marinade, and roughly chop them. 

3.       Put them in the salad. 

4.       Right before serving add the artichoke marinade, toss the salad and sprinkle the parmesan cheese on top.
