Salmon in Puff Pastry

Ingredients:

3 six to eight ounce skinless salmon filets

2 sheets of puff pastry defrosted and brought to room temperature

½ cup mayonnaise

2 bunches of green onions with the stems roughly chopped

2 to 3 tablespoons of capers

Zest of one lemon

Salt and pepper

1 large beaten egg for brushing the top of each

Directions:

Set your oven to 325 degrees.  Rinse the salmon filets and pat them dry with a paper towel.  Lightly salt and pepper the filets and set them to the side.  In a bowl mix the mayonnaise, green onions, capers and lemon zest and mix until well combined. Set this mixture to the side.  On a lightly floured countertop use a rolling pin to smooth out the puff pastry.  On one side about an inch and a half from the edge of the pastry spoon a large dollop of the mayonnaise mixture onto the puff pastry.  Place one salmon filet upside down but on top of the mayonnaise mixture.  Fold the puff pastry around the filet and pinch it tight.  Place seam side down into a non stick pan.  Brush on top of each one some of the beaten egg mixture and then place in the oven and cook until golden brown, about 35 to 45 minutes.  Allow to set for 10 minutes when you remove from the oven before serving.
