Pork in Pork Wrapped in Pork

Ingredients:

2 pork tenderloins

2 links of pork sausage (whatever your favorite type)

1 ½ lbs of bacon

Raspberry Chipotle BBQ sauce

Butchers twine

Directions:

Preheat your oven to 375 degrees.  Make a cut at least half way, but not all the way through the two pork tenderloins lengthwise.  Remove sausage from the casings and cook the sausage.  Drain the sausage and finely mince or pulse several times in your food processor until it is in small pieces.  Stuff once of the tenderloins with the sausage and then place the other tenderloin on top of it so that the think end of one tenderloin is on top of the thin end of the other tenderloin.  This promotes even cooking.  Wrap this in strips of bacon and then tie it together with butchers twine.  Place this on an oven safe pan or dish and bake in the oven until the internal temperature reaches 130 degrees.  At that point, gently pour half of the bottle of BBQ sauce over the pork and brush it onto all sides with a pastry brush.  Return to the oven and cook it until the internal temperature is 145 degrees.  Remove from the oven and let this sit and rest for 5 minutes.  Cut the twine off of the pork and then cut it into thick slices.  Pour the remaining BBQ sauce over the slices before serving.
