Easy Apple Dumplings

Ingredients:
2 Granny Smith Apples
1 package of Pillsbury crescent rolls
1 stick unsalted butter
1 cup white sugar
2 to 3 tablespoons of ground cinnamon
1/3 cup of Mountain Dew

Directions:

Preheat oven to 350 degrees. Grease a 9x11 baking dish with butter or non stick cooking spray. Peel, core and slice apples into quarters so you have 8 total pieces of apple.  Unroll crescent dough and wrap a triangle of crescent dough around each piece of apple pushing on the dough and forming it around the apple so as much of the apple is covered by the dough as possible. Place each of these into the baking dish leaving space in between them if possible. Microwave the butter until it is melted, about 45 seconds and combine melted butter with the sugar.  Sprinkle butter and sugar mixture over the dumplings making sure to coat them as much as possible. Sprinkle ground cinnamon over the top of the dumplings. Pour Mountain Dew carefully around the dumplings taking special care not to pour the soda on top of the dumplings. Place the baking dish on a rack in the center of the oven and bake dumplings until they are golden brown, about 45 to 50 minutes. Allow dumplings to cool for about 10 to 15 minutes before serving. These go well with ice cream and also for breakfast. Although there are healthier things you should eat for breakfast. But Fr. Jeff may have eaten the leftover dumplings for breakfast once or twice. :)=

 

Pumpkin Pie Cake

Ingredients:
1 29oz can of pumpkin purée
(not pumpkin pie which already has spices in it)
1 12 fluid ounce can evaporated milk
3 eggs
1 cup of white sugar
(Light brown sugar works well too)
3 to 4 teaspoons of pumpkin pie spice
1 package of yellow cake mix
(any brand works well)
1 stick of unsalted butter melted
1 cup chopped pecans

Directions:
Preheat oven to 350 degrees. Lightly grease one 9x13 inch pan with butter or non stick cooking spray. In a large bowl combine the pumpkin purée, eggs, sugar, evaporated milk and pumpkin pie spice until thoroughly mixed. Pour into your pan. Sprinkle the yellow cake mix on top of this mixture evenly. Then drizzle all of the melted butter on top as evenly as possible. Sprinkle chopped pecans on top of the cake and bake on the center rack of your oven for 45 to 50 minutes or until it is done and brown on top. Remove from oven and let sit 10 minutes before serving with whipped cream on top. This is also good served cold or can be made earlier and reheated. Fr. Jeff has not had this one for breakfast, but he has had it for a mid-afternoon snack!
